Easy muffin recipe
Blueberry and white chocolate!
So I have been asked by a friend mentioning no names ( Gemma! ) for a quick and easy recipe for muffins, we eventually decided upon blueberry and white chocolate, but the best thing about this recipe is that you can add what ever ingredients you ike to get your chosen flavour.
A few idea’s are:-
Chocolate – just substitute 2 tablespoons of flour for coco powder and add chocolate chips and top with chocolate, yum!
Banana and toffee – just add a banana and top with toffee sauce.
Coffee and walnut – just add chopped walnuts and a teaspoon of coffee mixed with a very little hot water.
You can add a large handful of most soft fruits and dried fruits to get some great flavours ( not citrus though guys it will curdle! )
You can also make your muffins savory by adding cheese etc…!
So here it is the basic recipe, it makes one tray of twelve.
First off all line your muffin tin with muffin or cupcake cases you can find some great ones at www.cakestuff.co.uk, and pre heat the oven to 180 degrees.
350 g plain flour
200 g castor sugar
2 eggs
1 table spoon of baking powder
100 ml vegetable oil
300 ml milk
Fab thing is you just put all the ingredients into a jug ( will be easier to pour into the cases) and then blend it up I use a hand blender but you can use a whisk!
Add your fruit or other flavours ( if it’s sweet I normally add a few drops of vanilla essence)
Fill up the cases quite full and try not to spill up the edges as this will stop them rising properly. Then bake in your preheated oven for around 20 minutes untill they spring back to the touch and are a golden brown.
Leave to cool then add what ever topping you have decided upon these were laced with white chocolate and fresh blueberries,
Hay presto all done not much washing up either! Last thing to mention is that they do have a short shelf life no more than three days.
